Superfood Slice
I’m not a fan of The Hobbit or The Lord of The Rings stuff. I’m sure it’s super amazing and really deep and blah blah blah, but I can’t get into it. I’ve tried. In fact, in our first year of marriage this was one of the major points of contention. Anyway, I have watched the series out of a selfless love for my husband and I learnt one thing.
There is a such a thing as SECOND BREAKFAST.
If the only reason I wasted three days sitting in front of the TV watching dragons and fairies and whatever else it is was to learn that such a meal exists, then I am thankful for that experience.
I think these days it’s known as brunch. Either way it’s delicious.
We went to our friends’ house for brunch the other day, (a perfect meal time for having friends over – something I forgot to mention in my post about entertaining with kids the other day) but my friend cooked this. And it was amazing.
I sort of guessed the ingredients, half remembering what she was calling out the front door as we were leaving, and half using what I could find in my fridge and this is what we came up with. Forget zucchini slice, this is super-food slice.

Superfood Slice
Recipe Type: Brunch
Prep time: 10 mins
Cook time: 35 mins
Total time: 45 mins
Serves: 12 slices
Ingredients
1 sweet potato cut into 1cm cubes
1/2 stalk kale, chopped roughly
1 clove garlic minced
1 cup milk
1/2 cup of grated cheese
1 teaspoon parsley flakes
4 eggs
Salt and Pepper
Parmesan cheese to top
Instructions
Preheat oven to 180 degrees
Place the kale and sweet potato into a lined slice tray (20cm x 20cm)
Combine the eggs, milk, salt and pepper, grated cheese and parsley in a separate bowl and whisk to combine.
Pour mixture over vegetables in tray
Cook in oven for 35mins
Serve warm.
